Today is national Catfish Day… so I thought I’d toss out this completely fattening and wonderful recipe for you catfish lovers.

- 1.5 lbs of catfish fillets
- 1 lb bacon
- 1.5 cups chopped onion
- 4 cups diced potatoes
- 2 cans tomatoes
- 1/3 cup tomato paste
- 2 tbsp Worcestershire sauce
- salt and pepper to taste
Fry bacon until crispy. While bacon is frying, cut fillets into bite-size pieces. Remove bacon and place on paper towels to drain. Fry fish and onion in bacon grease until fish are done and onion is tender; set aside. In a large pot, combine other ingredients and bring to a boil. Cover, reduce heat and simmer until potatoes are tender. Pour fish, onions and bacon grease into boiling mixture. Cover and simmer 20 minutes more.
Wow, who knew it was Catfish Day? =) A good southern favorite. I like to use spicy V8 juice sometimes for an little change! @alanecooke
