No-Bake Nutella Cheesecake Cupcake

Is that a mouthful to say?? No-bake Nutella Cheesecake Cupcake.  Say THAT 100 times… and get back to me how it went.  Or, you could just create a batch and the only words I shall hear are Oh. My. Gosh.

These are a snap to make and I give the credit to the lovely Sugar Crafter for this amazing and simple recipe.  I love baking, but it’s so hot outside this time of year here in North Carolina (muggy too!) that using the oven is reserved for mornings when it’s not crazy outside just yet.  So the no-bake recipes sing a beautiful tune in August heat.

The only thing I changed about the recipe is the placement of the filling.  I decided to use cupcake liners and put an Oreo cookie at the bottom as the foundation.  Then placed the filling on top of the cookie.   Some of you know that I love to teach children how to bake and work with food, so I had my kids do most of the work.  I supervised, made sure they wouldn’t do something silly like lick the spoon and put it back in the filling mix, and kept the kids from making huge messes.  (Also safety is a factor at their ages!)  So, feel free to involve your kids if you have them, and let them feel important that they made a CHEESECAKE!  Then they can go boasting to their friends when school starts up, how smart they are.

Ingredients:

• Oreo Cookies
• Cupcake liners
• 6 oz. softened cream cheese
• 1 cup of Nutella
• 1/2 cup of whipping cream

Directions:

Place 12 liners in a cupcake pan.  Put one Oreo cookie in each liner.  In a small bowl, beat whipping cream until soft peaks form.  Set aside.  In a larger bowl, beat Nutella  and softened cream cheese until well blended.  Add in whipped topping that you created in the other bowl, and beat together until smooth.  Spoon the mix on top of the Oreo cookies and chill for 1-2 hours.
