Last week I had a major baking #FAIL. Nothing went right, and all I could do was laugh! Yes, I do make mistakes people! And yes… while it should bother me, it doesn’t. I have been going steady all year, so it’s about high time I had a VERY off week. So, as I type this, I have a new recipe sitting in the oven called Superfruit Banana Bread. It’s my own recipe, so who knows how this is going to turn out! That’s the joys of testing out ideas. You win some and lose some.
But I DO secretly hope this recipe is a win! I’ll let you all know in an hour… Ok, so you don’t have to wait, but I do. Done! The taste? WOW, definitely outstanding! It’s got the whole wheat texture and yet given a sweet pop from the fruit jam. And of course… the chocolate, a perfect balance to the bread. 🙂 Happy times!
In the meantime, what is in this myseterious Superfruit bread? Superfruit Jam of course! The jam is from Trader Joe’s, it’s organic and packed full of fruits we should all probably be eating from time to time anyway. Here’s the breakdown:

- Red Grape
So, when you feeling run down, coming down with a cold, maybe you should go buy a jar of this delicious jam and get yourself back in gear! Well, I am not sure HOW much you need to eat, but I’m sure even a little will do wonders.
- 6 Tbsp. of softened butter
- 1 cup of sugar
- 2 eggs
- 1 Tbsp. vanilla
- 1/4 cup of 1% milk
- 3 mashed overripe bananas
- 4 heaping TBSP of Trader Joe’s Superfruit Jam
- 1 3/4 cup of King Arthur Whole Wheat flour
- 2 Tbsp. baking powder
- 1/4 tsp. of freshly ground sea salt
- 1/4 cup of chopped dark chocolate chips
Preheat oven to 350 degrees. Grease bread pan with butter or spray with Pam. In one large bowl, cream together the butter and sugar. Beat in the eggs, one at a time until smooth. Add in vanilla, milk, bananas and superfruit jam and mix together. Set aside. In another bowl, whisk together the dry ingredients. (flour, baking powder and salt) Stir in the dry mix into the wet ingredients and beat until well blended. Do not mix too much, as you don’t want to puree the bananas. In a little bowl, dredge the chocolate chip bits in flour and then stir into the superfruit batter. Pour into bread pan and cook for 1 hour and 10 minutes.
