My family and I have a big sweet tooth for dark chocolate, and I wanted to make them a treat that was a little different than the usual chocolate chip cookie. I have an everything chocolate cookbook that I love, and thought I would share the recipe with you.
Thoughts on the recipe turnout were that the cookie was crisp, even when I was careful not to over-bake it. I like the recipe, but I wonder if there was a way to soften up the cookie a bit? I’d love to hear your ideas! Overall, however, the flavor was great, and my family has pretty much devoured the batch in just a few days. Enjoy!!
Ingredients (adapted from Chocolate Mousse):
- 1 cup butter, softened
- 1- ½ cups sugar
- 2 eggs
- 2- ¾ cups flour
- 2 tsp. cream of tartar
- 1 tsp. baking soda
- ½ tsp. salt
- ¾ cup dark chocolate chips
- 3 Tbsp. sugar
- 1 ½ tsp. cinnamon
Preheat oven to 350 degrees. In a mixing bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at a time. In a separate bowl, mix together flour, cream of tartar, baking soda, and salt. Add gradually, to the butter mixture until incorporated. Stir in chocolate chips. Set aside.
In a small bowl, add 3 Tbsp. sugar and cinnamon together. Roll dough in 1” balls and roll into sugar mixture. Place on baking sheet, press lightly with a fork, and bake for 8-10 minutes or until set.
